A Sustainable Homestead in The Texas Hill Country

My little girl asked me the other day if she could make eggs. Of course, I said. The next thing I see from out of the window, her little head bopping from the place were the ducks lay their eggs. A bit later, as I walk in the kitchen, I see her making the eggs for her lunch. I sometimes wonder to myself that maybe it is possible to have enough of our community growing food, raising animals for joy and fun, that going to the grocery would not be a necessity, but an option. Can a town/region become sustainable that our nourishment is local and low cost or free? I wonder. I’ve seen this exist in different parts of world and it is beautiful to witness because it involves community and relationships. An important thing about growing local is that you know the soil where your food is coming from……And the soil is important for growing safe nutrients rich foods. Here is a view of some of the things going on at our home right now. If you are interested in starting to live more sustainably don’t get overwhelmed. Growing artichokes from seed in zone 8 Central Texas is not difficult. With the right soil and the right conditions in a year or 2 you will have artichokes flower buds ready to eat. My husband loves using his Belgian father’s recipe to make delicious artichokes for us. This year the artichokes that are growing around our homestead are smaller than usual. So instead of taking them to kitchen I’ve decided to eat the artichokes raw in the garden. In this video I show you how I prepared some that I have harvested before eating them. The hearts of the artichokes are tender and yummy. Artichokes are particularly high in folate and vitamin C, they also supply important minerals, such as magnesium, phosphorus, and potassium. When our family started on our journey to become more sustainable we realized as time went by that this was going to be a journey out of our control, that it was going to take time. Adding bees to our sustainable homestead is a decision that has naturally developed and now I hope has the possibility to be naturally sustained. I always remind myself that there is no rush when you are cultivating something good. Things will eventually and naturally come into place. I needed ingredients for oxtail stew for dinner tonight. I didn’t want to go to the grocery store. Too much going on 😅 I was happy to find most of the things I needed growing around the house- from ginger, carrots, spinach, beet greens, leeks and onions, to thyme and bay leaves. Trying to live sustainably was difficult at first but thankfully it’s getting easier and more rewarding as time goes on.
